Frequently asked questions
How do I melt the pistoles? In the microwave in 20 to 30 second bursts, stirring between each. Or over a double boiler, in a bowl set over a saucepan of simmering water.
Are they pre-tempered? Yes. If you melt them slowly without exceeding their critical temperature, they keep their temper. Perfect for moulds and coatings that will stay glossy and snap cleanly.
How long do they keep? Several months in their original packaging, stored in a cool, dry place.
Are they gluten-free? Yes.
Do you ship across Canada? Yes. We pause shipping during heat waves.
At our Atelier
Our pistoles are the same ones we use at our Chocolate Atelier in Greenfield Park, on Montréal's South Shore, to craft our desserts. Available online and in our restaurants for takeout.
